With seven Michelin stars under his belt, Chef Noom is one of the most celebrated culinary maestros in Thailand. While Chef Noom&rsquo;s restaurant in Bangkok, Chim by Siam Wisdom, is well-known for its take on traditional recipes, the restaurant &mdash; located at TSLAW Tower &mdash; introduces innovative dishes that elevate traditional Thai flavours with a modern interpretation.

Tell us more about Chim by Chef Noom.
Chim by Chef Noom embodies the wisdom of Siamese culture in every dish. Chim is a signature dish that reflects the culture of the region. It showcases improved cooking methods and ingredients, allowing diners to experience authentic flavours that transcend traditional cuisine.

What motivated you to bring your culinary expertise to Malaysia?
My goal is to demonstrate excellence in Thai cuisine and beyond. Fortunately, I was able to find a partner in Malaysia who shares my passion for Thai cuisine.&nbsp;

What&rsquo;s something different that you aim to bring to the local culinary scene?
I aim to introduce dishes that go beyond typical Thai offerings, pushing the boundaries of what&rsquo;s possible with Thai cuisine. That said, we also incorporate local ingredients and create our unique curry paste, ensuring that our dishes are authentic while tailored to the Malaysian palate. By doing so, we aim to introduce a fresh perspective on Thai cuisine beyond the familiar favourites.

How do you balance maintaining the authenticity of Thai cuisine while adapting to local Malaysian tastes?
Everyone has different taste preferences, so instead of trying to please everyone, I focus on bringing my authentic flavours to the table. I encourage diners to be open-minded and experience Thai food in a way they never have before. My offerings are unique and unlike any other Thai cuisine you&rsquo;ve encountered.

Can you share some insights into the cultural significance of some Thai dishes you serve?
The dishes at my restaurant are not fusion &mdash; they are modern interpretations of traditional Thai cuisine. Each dish is carefully crafted to showcase the essence of Thai culture while incorporating innovative techniques and presentations.

How does Chim by Chef Noom differ from Chim by Siam Wisdom?
While Chim by Siam Wisdom delves into old, traditional recipes (for example, we use clay pots for curries), Chim by Chef Noom offers a modern interpretation of Thai dishes without fusion, providing a contemporary take on classic flavours.

You have seven consecutive Michelin star awards under your belt. Do you ever feel the pressure to maintain it year after year?
There is a lot of pressure, especially when six or seven restaurants in Thailand lost their Michelin stars this year. Initially, I was worried about losing the star, but I realised that focusing on inspiration for my dishes is more important. Instead of worrying about the star, I concentrate on how to excite and satisfy my customers.

If you could only eat one dish for the rest of your life, what would it be?
My mother's omelette and green curry are the best. The love and care she put into her cooking made every dish special. She cooked excellent Thai food, and she inspired my love for cooking from a young age. There's something about the food that&rsquo;s prepared by one's parents &mdash; it's the ultimate comfort food that always feels like home.&nbsp;

What do you hope diners take away from their experience at Chim by Chef Noom?
We want diners to share their experiences through word of mouth. While positive reviews and photos are nice, personal recommendations are more powerful. We already have many repeat customers which is a testament to the quality of our food and service.
